How Operations Research can support a Beef meat packing manager?
The structure of red meat sector is changing from a family-based, small-scale, independent firm to one in which larger firms are more tightly aligned in a supply chain. Our contribution emphasizes then, the importance and complexity of new decision-making tasks and envisions new challenges for OR methods to be successfully applied to increase chain efficiency. Specifically I will introduce a production problem faced by the meat packing manager and how this problem could be related to the efficiency of the whole beef meat supply chain.

Sara Verónica Rodríguez Sánchez, is a Assistant Professor from the University Autonomous of Nuevo Leon located in the north of Mexico. She has a PhD in Engineering and a Master in Statistics and OR from the University of Lleida, Spain. Her major is Industry Engineering. Dr. Rodriguez’s research focuses on the application of OR to support the decision making of the read meat supply chain manager.
